WHAT IF FOODS Pumpkin Curry Noodle Bowl

Equipment

  • 1 Pot
  • 1 Cutting Board
  • 1 Knife
  • Air Fryer

Ingredients
  

  • 3 C. Water
  • 1 Packet What if Foods Pumpkin Curry Noodles
  • 1 Green Onion
  • 1/2 Block Firm Tofu
  • 1 Dash Salt

Instructions
 

  • Pour 3 cups of water in pot and set stove on high. Chop up green onion. Press tofu with a paper towel and cut into 1 inch cubes. Lightly salt the tofu and place in Air fryer at 350 for 10 minutes.
    Place What If Foods Pumpkin noodles in boiling water and set timer for 5 minutes. Stir Occasionally. Strain and return to pot. Add Oil, Sauce and Curry Seasoning Packet.
    Plate the noodles, place tofu on top and sprinkle with green onions. Enjoy!

Protein Options

While this recipe calls for tofu, I know some people (even vegetarians) cannot stand it. In this case, you could certainly use tempeh or even shelled edamame instead. If you eat seafood, some shrimp sautéd in butter would be amazing with these noodles. For all the meat eaters out there, I think sliced chicken breast would be a great option too.

All the Veggies

A fresh green onion adds that hint of effortless freshness and a little kick to this curry bowl. If that’s not your thing and you have some more time to prep some veggies, you can definitely try any of the traditional curry vegetables. Things like sautéd Green Beans, Bell Peppers, Onions, Carrots, Baby Corn, Potatoes, Broccoli or Mushrooms would all be so yummy in this noodle bowl.

Hot or Cold

In the heat of the summer, a cold noodle dish can actually be quite delightful. If you decide it’s too warm out for a hot meal, you can totally have this bowl cold. After draining the noodles, rinse them in cold water and then prep as directed. Chill in the fridge for a few extra minutes if desired.
