Tres Tribus is THE ONLY mezcal to earn B Corp Certification. They are a fully carbon neutral company and are committed to preserving Oaxaca’s thriving biodiversity. This small batch, artisanal mezcal comes from remote mountains of Oaxaca, Mexico and is carefully hand-crafted by fifth generation Mezcalero, Juan Coronel.
Tres Tribus’ has three single agave varietals; Espadin Capon, Tobala, and Cuishe. They also have an agave blend called Ensamble, a delightful spirit, ideal for making cocktails- like the one below.

How is it made?
This special mezcal is distilled exclusively from fully mature, wild agave plants harvested from the local pine-covered forests. These plants can range anywhere from 8 to 35 years old. For every agave plant harvested, four new ones are planted. They also replant 1,000 to 3,000 new trees each year to offset the trees and wood used in the cooking and production process.
Following the forage, the agave plants are cooked low and slow for up to a week in an underground conical oven. This method elevates the natural flavors of the plant and prevents the smoke from stealing the show. Then, all but one varietal is mashed entirely by hand, using solid wood mallets.
The water used to make this mezcal is from the Tiaá Volcano Aquifer. This unique mountain water source provides a rich and clean flavor that no other mezcal can touch. The mezcal then ferments for up to week, once again underground, where it picks up floral notes of jasmine and rose. Finally, the mezcal is double distilled, in a hand crafted still made of copper and other local elements.

What makes it different?
While most mezcal is known for its strong and sometimes overbearing smokiness, Tres Tribus is wildly different. Because of their time and patience, it generously allows the other flavor notes like- vanilla, fig, rosemary, jasmine, prickly pear and more to come through, creating a masterful dance on your palate that is simply stunning and unmatched. One must try it to fully believe it. Frankly, I don’t drink spirits neat but Tres Tribus is truly THE exception- you really don’t need this recipe at all, if you have Tres Tribus.
