This Easy Veggie Spinach Salad is one of my favorite go-to’s all year round. It’s super simple, really quick to make and pretty easy to swap out any of the ingredients listed, for ones you might have in your refrigerator already.
There are no rules for this recipe, that’s the beauty of salads in my opinion. Simply add what you like and subtract what you don’t- it’s nearly impossible to mess it up. Easy Veggie Spinach Salad
Equipment
- 1 Knife
- 1 Cutting Board
- 1 Veggie Spiraler (or cheese grater)
Ingredients
- 2 Cups Baby Spinach
- 1/3 Cup Canned Kidney Beans (or any beans you like)
- 1 Small Carrot Spiraled
- 1 Mini Cucumber Sliced
- 4 Cherry Tomatoes Quartered
- 2 Tbsp Honey Mustard Vinaigrette (or whatever you like)
- 6-8 Croutons (optional)
Instructions
- Plate everything in order listed above and enjoy!
Switch it up!
Let’s start with the base of greens. If you’re not a fan of Spinach, don’t worry- Kale, Arugala or Romaine lettuce will also work just fine too. If you don’t like Kidney beans, Black beans, Pinto Beans, Garbanzo Beans (or any bean, honestly) in this salad is amazing. The Carrots can be swapped out for fresh fresh Bell Peppers, or skipped entirely. The Mini Cucumber can absolutely be a regular sized Cucumber- you just need 1/3 or a 1/4 of a big one for this single serving recipe. Same goes for the Cherry Tomatoes, a regular Roma Tomato will taste just as delicious, and you’ll only need 1/4 of one. The dressing is TOTALLY up to you: Honey Mustard Vinaigrette, Ranch, Italian, Caesar, or a dribble of Oil and Balsamic Vinegar, all go wonderfully on this Easy Spinach Salad.
Switching up your dressings and toppings can make this salad easy to put on repeat and still be a wildly different experience every time. Croutons can be swapped for another kind of crunch, like Slivered Almonds, Walnuts, or Pepitas, for a gluten free alternative.
Make it Creamier!
I really love Avocado on this salad and if you like cheese, there are endless possibilities to make this recipe even more interesting! Some of my favorites I’ve tried so far are: crumbled Feta, Fine Shredded Parmesan or even traditional Shredded Cheddar are all so yummy! If you’re really a fan of dairy, a little spoonful of sour cream on top can also be a fabulous addition to this Spinach salad Recipe too!
